The thermostat plays an important role in the operation of your cooker as it's responsible for regulating the temperature of the main oven. Thermostats will usually be located inside the oven and they have a capillary tube, or "phial" as it can be known, with a probe containing a gas. The gas inside the capillary tube expands and contracts in accordance with the oven temperature, which in turns switches the thermostat on/off to maintain the selected temperature.
